smells like Christmas spirit!

Yesterday my house was filled with yummy smells that reminded me of nothing less than the fact that it's almost Christmas, & I have yet to make a dent in all the Christmas shopping I need to do...

Of course I was baking away at my three new Christmas cupcakes, that were just as yummy as they smelled.

Ginger bread, I like to call them my ginger babies just
because they have little ginger bread cookies on top 
of them that are just too little to be men (:


Eggnog, yes I put eggnog in to a cupcake, & it was AMAZING!

I even gave away free cupcakes today at the mall,
because Christmas is all about giving!

I'm even in such a giving mood,
that I will share my eggnog cupcake recipe with you.
Aren't I so nice?

Eggnog cupcakes

    ♥ 1 1/4 cup cake flour
    ♥ 3/4 teaspoon baking powder
    ♥ 1/4 teaspoon baking soda
    ♥ 1/4 teaspoon salt
    ♥ 1 stick unsalted butter, room temperature
    ♥  3/4 cup sugar
    ♥ 1 large egg, room temperature
    ♥ 1 large egg yolk, room temperature
    ♥ 1 tablespoon vegetable oil
    ♥ 1 teaspoon vanilla extract
    ♥ 2/3 cup eggnog, room temperature

Directions

Preheat the oven to 350 degrees.

Sift the flour, baking powder, baking soda, and salt into a medium-size bowl and set aside.
In a large bowl cream the butter and sugar together until light and fluffy.
On low speed add the egg and yolk one at a time.
Beat in oil and vanilla until incorporated.
Gradually and add the flour mixture and eggnog, alternating between the 2, beginning and ending with the flour mixture.

Distribute all of the batter evenly between the 12 baking cups.
Bake for 15-18 minutes

You can frost them with whatever frosting you want to, but I frosted mine with a cream cheese frosting with 1/2 teaspoon nutmeg added to it (:
